Nicolas Haeni took over the winery in 2014, after working in wineries all around the world, including Australia, New Zealand, and California. Domaine Nico produces a range of wines, including red, white, and rosé, all made from local grape varieties such as Syrah, Grenache, and Carignan. The winery also produces a unique orange wine, made from white grapes that are left to macerate with their skins, giving the wine a beautiful amber hue and complex flavors.

One of the standout wines from Domaine Nico is the Caux Rouge, a blend of Syrah, Grenache, and Carignan. This wine is aged in oak barrels for 12 months, giving it a rich and velvety texture, with notes of red fruits, spices, and a hint of vanilla. It is a perfect representation of the terroir and winemaking style of the Languedoc region.

Another notable wine from Domaine Nico is the Les Buissonnets, a white wine made from a blend of Roussanne, Marsanne, and Grenache Blanc. This wine is aged in oak barrels for 6 months, giving it a smooth and creamy texture, with aromas of white flowers
