Domaine Paul Pillot

Domaine Paul Pillot is a family-owned winery located in the heart of the Côte de Beaune region in Burgundy, France. The estate has been producing exceptional wines since its establishment in the early 19th century, with current winemaker Thierry Pillot continuing the family's legacy of crafting high-quality and terroir-driven wines.

The estate covers 13 hectares of vineyards, primarily in the appellations of Chassagne-Montrachet, Saint-Aubin, and Santenay. The soils in these areas are predominantly limestone and clay, providing the perfect conditions for growing Chardonnay and Pinot Noir, the two grape varieties used to make the wines of Domaine Paul Pillot.

The winemaking philosophy at Domaine Paul Pillot is centered around respecting the terroir and expressing the unique characteristics of each vineyard site. The grapes are hand-harvested and sorted, and only natural yeasts are used for fermentation. The wines are then aged in French oak barrels, with a mix of new and old barrels, to add complexity and structure to the final product.
