An exquisite accompaniment to exclusive parties and special occasions, it pairs well with fried fish such as ocean perch, sole or char on pepper cream or with full-flavored vegetable risotto.
The St. Michael-Eppan 2021 Alto Adige Sauvignon Sanct Valentin feels like an ice cube on the palate that refreshes and revives. This is a sharply tonic and lean wine with great tension and energy. The bouquet opens to passion fruit, lychee, green papaya and underripe pineapple. The alcohol content is recorded at 14%, which seems a little high for an Alto Adige wine, but the heat is well absorbed by the wine's lean texture. Zesty exotic fruit appears on the finish. Sanct Valentin sees mostly stainless steel with 25% aged in tonneaux.

Sanct Valentin is a renowned wine producer located in the heart of Alto Adige, Italy. The winery is situated in the San Michele Appiano region, which is known for its exceptional wine production. Sanct Valentin has a rich history that dates back to the early 1900s when it was founded by a group of passionate winemakers.

The winery is named after Saint Valentin, the patron saint of wine, and is known for its exceptional Sauvignon Blanc. The Sauvignon produced by Sanct Valentin is a true reflection of the region's unique terroir. The grapes are grown in the vineyards located at an altitude of 450-550 meters above sea level, which gives the wine its distinct character.

The production process at Sanct Valentin is a combination of traditional and modern techniques. The grapes are handpicked and carefully selected to ensure only the best quality grapes are used. The winemakers use stainless steel tanks for fermentation, which helps to preserve the wine's natural flavors and aromas.

The Sauvignon produced by Sanct Valentin is a dry white wine with a pale yellow color. It has a complex aroma that is a combination of citrus, tropical fruits, and herbs. On the palate, the wine is crisp and refreshing with a long finish. It pairs well with seafood, salads, and light pasta dishes.

Sanct Valentin is also known for its exceptional red wines, including Pinot Noir and Cabernet Sauvignon. The Pinot Noir is a medium-bodied wine with a ruby red color. It has a delicate aroma of red fruits and spices and a smooth, velvety texture. The Cabernet Sauvignon is a full-bodied wine with a deep red color. It has a complex aroma of black fruits, spices, and oak and a long, lingering finish.

Overall, Sanct Valentin is a must-visit winery for anyone who appreciates exceptional wines. The winery's commitment to quality and tradition is evident in every bottle they produce. Whether you're a fan of white or red wines, Sanct Valentin has something to offer.

The Alto Adige DOC (Denominazione di Origine Controllata) is a prestigious wine appellation located in the northernmost part of Italy, nestled in the region of South Tyrol, also known as Südtirol. This area is renowned for its unique blend of Italian and Austrian cultures, which is reflected in its winemaking traditions and the varietal diversity. The region's cool climate and high altitude create an ideal environment for growing a variety of grapes, leading to the production of wines with distinct freshness and aromatic intensity.

Alto Adige DOC is especially noted for its white wines, such as Pinot Grigio, Gewürztraminer, and Sauvignon Blanc, which are highly appreciated for their crispness, elegance, and aromatic complexity. The area also produces excellent reds, including Schiava and Lagrein, which are cherished for their robust flavors and smooth tannins. These wines typically exhibit characteristics influenced by the terroir, such as mineral notes derived from the mountainous terrain and a vibrant acidity due to the cooler growing conditions.

The Alto Adige DOC appellation ensures that all wines produced under its label meet rigorous standards of quality and authenticity. This is achieved through strict regulations governing viticulture and winemaking practices, including yield limits, grape varieties, and aging requirements. As a result, Alto Adige DOC wines are not only a symbol of high quality but also a true expression of the region's rich cultural heritage and winemaking expertise.
